Wölfe Santoku Knife 5.5”

Forged from carbon alloy German steel.  A medium-sized, multipurpose kitchen knife of Japanese origin with a lightweight blade with a straight or slightly curved cutting edge, and a spine that curves downward to the tip.

Wölfe cutlery incorporates a G10 handle material.  G10 is a synthetic knife handle material made to withstand the rigor of professional kitchens and the everyday use of the enthusiastic home cook.

For the blade steel, we chose X50CrMoV15, a German carbon alloy steel, which is hard enough to maintain an excellent edge but not so hard that it is brittle and prone to chipping or difficult to maintain for someone using their knives daily.
